This is an awesome salsa that  doubles as a salad!  You can use it as a dip, or on tacos, burritos or fajitas, garnish fish, chicken or beef with it, or just serve it on the side.  Don’t believe me? Give it a try. It’s so yummy!

Salsa

 

 Ingredients:

  •  1pt cherry tomatoes
  • 1 bunch cilantro (coriander)
  • 1 can of baby corn*, or one cob of corn (cut corn off the cob)
  • 1 can of black beans*
  • 1 lime
  • 1/2 red onion
  • paprika
  • 4-6 dashes of tobasco sauce
  • balsamic vinegar (liberal amounts)

BPA-free cans are now available.

 

Directions:

Wash the tomatoes and cilantro and cut the into very small pieces.

Rinse the canned corn and beans in  a strainer (this will take about 40% of any added salt away). Then throw them into a large bowl. Add tomatoes and cilantro.

Squeeze the juice of an entire lime into the bowl.

Slice the onion into small pieces. Add the onion to the bowl along with the paprika and tobasco. Pour balsamic vinegar over the top generously.

The salad is even better the next day!
