Lean, Summer Protein Wraps

This fall I posted an Asian chicken lettuce wrap recipe that I was eating quite regularly.

The speed at which they can be made,

plus the taste, made this recipe one of my faves for lunch. My husband loves them too. And they’re a great, easy and fun fallback for dinner. Since that post, I’ve made several iterations of this meal and loved them all equally as much. 

Some clients tell me they don’t like eating the same meal twice in a week.

But I show them how, with a good foundation recipe, you can make a small adjustment like a different vegetable, a different spice or a different dressing, and have a completely different looking and tasting meal. The kids, and even the husband won’t even notice you’re doing a recycle!

A great foundation recipe can be used all year,

with different produce based on the season. So, having a few foundation recipes with flexible ingredients makes it easier to have meal ideas throughout the year.

Aside from seasonal fruits and vegetables,

a change in weather also brings different food preferences for many of us. During hot weather, we usually want something cold and light. During cold weather, we generally desire heavier, more filling foods.

A lettuce wrap can work in all seasons

you can add or subtract warm rice, and the type of meat and vegetables you use will make it a heavier or lighter meal. For example, the Asian style chicken wrap is great for the fall as daikon radish and carrots are root vegetables and available all year.

They’re LuciFit style, which means they’re simple, healthy and delicious. You can alternate dressings, as well as proteins and vegetables to your liking. As always, try to choose a dressing with the least possible HFCS, sugar and salt.

Chicken Lettuce Wrap with Rice, Red Peppers and Sweet Ginger Chili Dressing

 

Ingredients:

Three to six, large lettuce leaves, 3 oz chicken, 1/3 c rice, 3/4 sweet red pepper (cut lengthwise), 6 tsp sweet ginger chili dressing (currently I’m using Sweet Ginger Chili Sauce by Ginger People).

Divide ingredients into three wraps. Three wraps is one serving.

 

 

Chicken Lettuce Wrap with Carrots and Russian Dressing Atop a Whole Grain Tortilla

Ingredients:

Three lettuce leaves, 3 oz chicken, shavings of 1/4 large carrot, a 5″ tortilla (here I use Mia Rancho Ancient Grains), 2 tsp Russian dressing.

Place all ingredients on top of one tortilla.

Steak Lettuce Wrap with Sweet Peppers and Sweet Ginger Chili Sauce

Steak, pepper, lettuce

Ingredients:

Three to six lettuce leaves, 3 oz cold steak, 3/4 sweet red pepper (cut lengthwise), 6 tsp sweet ginger chili sauce (currently I’m using Sweet Ginger Chili Sauce by Ginger People).

Divide ingredients into three wraps. Three wraps is one serving.
