Asian Inspired Eggplant, Green Beans and Basil


Here's what you'll need:

Eggplant (2 medium)
String Beans (large bowl)
Shitake or Pioppini Mushrooms (1 pt)
Garlic (1-2 cloves)
Cilantro (1 bunch)
Basil (1 bunch)
1-2 Hot Peppers (green or red or both)
Firm Teriyaki Tofu (plain works too)
Baby Corn (can)
Olive Oil (2Tbsp)

Asian Sauces:
My favorite for this recipe are Plum, Sweet Red Chili, Soy

Eggplant Green Beans Basil

It's super easy.  Here's what to do:

  • Cut ends off beans and halve, cut hot peppers into very small pieces, wash all other vegetables and herbs and cut everything into bite sized pieces.

Basil Cilantro and Mushrooms

Chopped Eggplant

  • Heat 2Tbsp Olive Oil in a large pan or wok
  • Crush garlic and place it into pan with hot peppers, mushrooms and eggplant. Stir until eggplant gets soft and brown
  • Add string beans, tofu and corn, stir til heated (beans should stay crisp)
  • Add 1-2 Tbsp of each Asian Sauce and heaps of basil and cilantro, stir til heated (1 min or so)
  • Transfer all into a large bowl so the vegetables stop cooking
  • Bring bowl to table

Stir fried eggplant
